Lemon Curd

Lemon curd is a velvety, bright yellow spread that combines the tartness of lemons with the richness of butter and eggs, creating a smooth and luxurious texture that is both sweet and tangy.

This recipe comes from one of my favorite cookbook authors, Ina Garten. I love how simple and delicious her recipes are! I'm not sure I've ever made anything of hers that wasn't tasty. Having said that, this is one of those recipes that I have made over and over again throughout the years. With minimal ingredients and a few short steps, you can have homemade lemon curd that is sure to please!


Ingredients

  • Zest of 3-4 lemons

  • 1 1/2 cups sugar

  • 1 stick unsalted butter, room temperature

  • 4 large eggs

  • 1/2 cup lemon juice (3 to 4 lemons)

  • 1/8 teaspoon kosher salt

 

How to make it

  1. Using a micro plane, remove the zest of 3-4 lemons, being careful to avoid the white pith. Put the zest in a food processor fitted with the steel blade. Add the sugar and pulse until the zest is very finely minced into the sugar.


  2. With a hand mixer or stand mixer fitted with a paddle attachment, cream the butter, sugar and lemon mixture together. Add the eggs, 1 at a time, and then add the lemon juice and salt. Mix until combined.


  3. OR skip step 2 all together and do the following


  4. Combine sugar, lemon zest, butter, salt, lemon juice in a 2 quart saucepan over low heat. Whisk together eggs in a separate bowl and slowly add them to the warm butter and sugar mixture. STIR CONSTANTLY until thickened (about 7-10 minutes). The temperature should reach 170°F.


  5. Remove from the heat and cool before refrigerating. Lemon curd will thicken in the fridge as it sits.


Notes

  • Food Processor: by pulsing the lemon zest and the sugar together, it creates a finer texture. If you’re not worried about that, then skip that step. You can always pour the warm curd through a colander afterwards to remove any large bits of zest before refrigerating.
