Pecan Pie Bars

If you enjoy Pecan Pie, you'll absolutely adore these Pecan Pie Bars! They're simple to prepare, delicious, and convenient to carry to your next get together. I promise, you're gonna love them!!

You either love pecan pie or you don't, and the divide can be quite pronounced among dessert enthusiasts. Personally, I am quite a fan of this classic Southern dessert, with its rich, sweet filling and crunchy pecans. However, I have encountered many people who proudly proclaim that they are NOT pecan pie people. Interestingly enough, these same people often find themselves in love with these pecan pie bars, which offer a delightful twist on the traditional pie format.
These bars are chewy and gooey, providing a satisfying texture that is both indulgent and comforting, yet they manage to avoid the messiness that can sometimes accompany a slice of pie. For me, the edges of the bars are the standout feature; they become wonderfully chewy and caramelized, adding an extra layer of flavor that I simply cannot resist.
I truly hope you give them a try for yourself, as I believe you'll find them just as delightful as I do! There are two distinct layers to these bars, and the best part is that they come together super quickly, making them an ideal choice for any occasion. You can whip them up in no time, and the convenience factor is especially appreciated during the busy holiday season. Making them ahead of time not only saves you precious moments in the kitchen but also helps to keep your sanity intact when entertaining family and friends.
Shortbread Crust: This buttery shortbread crust is incredibly simple to prepare, requiring only three basic ingredients. Unlike a traditional pie crust that often demands time-consuming steps such as chilling the dough, this crust is ready to go in a flash. It serves as the perfect base layer for all your favorite bar desserts, providing a rich and crumbly foundation that complements the sweet filling beautifully. The ease of preparation means you can focus on enjoying the baking process rather than stressing over complicated techniques.
Pecan Pie Filling: When it comes to the filling, you won’t need any crazy ingredients or major appliances to whip this up. With just seven straightforward ingredients, you can create a luscious pie filling that tastes absolutely amazing! The simplicity of the filling allows the natural flavors of the pecans to shine through, creating a harmonious blend of textures and tastes that will have everyone coming back for seconds. The ease of preparation means you can enjoy the process without feeling overwhelmed, making it an excellent choice for both novice and experienced bakers alike.
I truly hope you love these pecan pie bars as much as I do. They are a delightful alternative for those who might shy away from traditional pecan pie, and they are sure to impress anyone who tries them. The combination of the buttery shortbread crust and the gooey pecan filling creates a dessert that is not only delicious but also incredibly satisfying.
Happy Baking!
Pantry Items
Pecans- I love using pecan pieces but they can get a little pricey. You can save some money and buy whole pecans and then give them a good chop.
Butter - cold unsalted
All-Purpose Flour
Brown Sugar - I love using dark brown sugar, but light brown sugar is fine
Granulated Sugar
Salt
Corn Syrup - I love using dark corn syrup for this. It just gives it a nice rich flavor.
Equipment
Parchment Paper
Recipe Ingredients
Shortbread Crust
1 3/4 cups all-purpose flour
1/2 cup granulated sugar
3/4 cup (12 Tbs) cold butter
Pecan Filling
2/3 cups firmly packed dark brown sugar (or light brown sugar)
1/3 cup + 1 Tbs all-purpose flour
4 large eggs
1 Tbs vanilla extract
1/2 tsp salt
1 1/2 cups dark corn syrup (or light corn syrup)
2 cups chopped pecans
How to make it
Instructions
Preheat the oven to 350°F. Line the bottom and sides of a 9x13" pan with parchment paper, leaving some overhang on all sides. This will make it easier when cutting them later. Set aside.
Make the crust: In a medium bowl, whisk together the granulated sugar and flour. Cut in the chilled butter with a pastry blender, two forks, or your hands until the mixture resembles coarse crumbs. Press the mixture evenly into the prepared baking pan. Bake for 15-20 minutes, or until lightly browned around the edges. While the crust bakes, prepare the filling.
Make the pecan filling: In a large bowl, combine the flour and brown sugar. Whisk in eggs, vanilla extract, salt, and corn syrup.
After you remove the crust from the oven, pour the pecan filling mixture on top of the warm crust and spread into an even layer.
Bake for 40-50 minutes or until the filling is just set. Meaning, the center should wobble or jiggle just a little but it should not be runny. It will continue to "bake" as it sets so don't get tempted to over bake.
Remove from the oven and allow the bars to cool for at least 2 hours at room temperature before cutting. Make ahead, if you want, you can let them cool for 30 minutes at room temperature and then transfer them into the fridge over night.
Lift the bars out of the pan by gripping the parchment paper overhang; transfer to a cutting board and cut into squares. These are rich so smaller squares might be best but I love nice heavy slice. ;)
Store covered tightly in the refrigerator for up to 3 days....if they make it that long.
Notes
Thick Bars: I love these bars! I love how quickly they come together. If you would like really thick bars, this recipe easily doubles. You'll just have to extend the time. Par Bake the crust for 20-30 minutes and Bake the filling for around 60 minutes. You want it a little jiggly but not completely set.
