Creating a sourdough starter can be simple! Here's my approach to developing a starter that becomes active and bubbly within 7 days!

This straightforward and effective plan for creating a sourdough starter is designed to have you baking your very first loaf of delicious sourdough bread in no time at all! With just a little patience and dedication, you can cultivate your own starter from scratch, which will not only enhance your baking skills but also provide you with a unique flavor profile that only naturally fermented bread can offer. Here’s my comprehensive 7-day schedule to set you up for success in this rewarding culinary adventure.
Day 1: Gathering Ingredients and Initial Mixing
Begin your sourdough journey by gathering the essential ingredients: bread flour and water. Ideally, you should use filtered or bottled water to avoid any chemicals that might inhibit the growth of the wild yeast and bacteria that are crucial for your starter. In a clean glass or plastic container, mix equal parts of flour and water. A good starting point is 100 grams of flour and 100 grams of water. Stir the mixture until it’s well combined and has a thick, paste-like consistency. Cover the container loosely with a lid or a clean cloth to allow airflow while keeping out dust and debris. Place the container in a warm spot in your kitchen, ideally around 70°F to 75°F (21°C to 24°C), to encourage fermentation.
Day 2: Observation and First Feeding
On the second day, take a moment to observe your mixture. You might notice some bubbles forming, which is a good sign that fermentation is beginning. Even if you don’t see any activity yet, don’t worry; it’s still early in the process.
Day 3: Continued Feedings and Development
By day three, you should start to see more bubbles and perhaps even a slight increase in volume, indicating that your starter is becoming more active. Continue the feeding process: discard half of the starter and feed it with equal parts flour and water. As the days progress, you may choose to switch to whole grain flour, such as whole wheat or rye, which can provide additional nutrients and foster a more robust microbial community. This is completely optional. I have found just using bread flour is sufficient. Keep an eye on the aroma as well; it should begin to develop a pleasant, tangy smell, a sign that the wild yeast and lactic acid bacteria are thriving.
Day 4: Strengthening the Starter
On the fourth day, your starter should be showing significant signs of life. You might notice it rising and falling predictably after feedings. This is a great time to assess its consistency; it should be thick but pourable. Continue the feeding routine, but consider increasing the amount of flour and water to 100 grams each to give your starter more food as it grows stronger. This extra nourishment can help enhance its flavor and leavening power. Remember to keep it in a warm environment to promote optimal fermentation.
Day 5: Ready for Baking?
By the fifth day, your sourdough starter should be bubbly, have doubled in size within a few hours after feeding, and have a pleasant sour aroma. This is an excellent indicator that your starter is nearly ready for baking. To test its readiness, perform the "float test": take a small spoonful of the starter and drop it in a glass of water. If it floats, it’s ready to be used for baking. If it sinks, it may need more time and additional feedings. Continue with the feeding schedule, maintaining the same ratios, and keep nurturing your starter.
Day 6: Final Preparations
On day six, your starter should be at its peak activity. If it has passed the float test, you can start preparing for your first loaf. However, if it hasn’t, continue feeding it as before. The goal is to ensure that it is robust enough to provide the necessary rise for your bread. At this stage, you might want to experiment with different types of bread recipes that utilize sourdough starter, allowing you to familiarize yourself with the techniques involved in sourdough baking.
Day 7: Baking Your First Loaf
Congratulations! By day seven, you are ready to bake your first loaf of sourdough bread. Gather your ingredients, which will typically include your active starter, flour, water, and salt. Follow your chosen sourdough recipe carefully, paying attention to the fermentation times and shaping techniques that will help you achieve a beautiful crust and a soft interior. Enjoy the process, and remember that every loaf you bake will improve your skills and deepen your understanding of sourdough bread making.

Bread Flour – this has given me the best success
Spring Water - This is what I use. You typical tap water has been treated with chlorine and other chemicals by a local municipality. This can prevent your starter from rising appropriately. We want all the natural yeast and bacteria that occurs and tap water can affect that.

How to tell if your starter is active and ready for baking!
Visual Test
Consistent rise — it doubles or triples in volume predictably for 3-4 days in a row
Bubbles - the surface and sides are packed with active bubbles and the texture looks light and airy and like mousse like.
Smell Test
Pleasant smell — it smells yeasty, tangy, or slightly fruity rather than foul or putrid.
Float Test
Float test - drop a small spoonful of your starter into a cup of water; if it floats, it has enough trapped gas and is ready to bake.
Notes
Visual Signs that your starter is HUNGRY!
It will look deflated, thin, and watery.
it sinks back down to the bottom of the jar and loses its domed shape.
it turns watery, thin, and lacks the thick structure it had after a fresh feed.
Hooch layer - a clear, grey, or a dark brown liquid pools on the top or middle
Tiny bubbles - only small, foamy, or soapy bubbles remain instead of big airy pockets.
Here are some smell or other cues
Sharp odor - it smells very sour, vinegary, or like nail polish remover
Shrunken volume - it sits well below the high-water mark of its previous peak rise.
