Maple Bacon Cupcakes

These cupcakes are a delicious treat for brunch or a yummy treat for Father’s Day. The flavor combo of salty and sweet just takes it up to a whole other level!
We’re using a doctored cake mix but don’t let that stop you from making it from scratch! Quick, easy, and delicious!

These cupcakes taste like a pancake breakfast. Maple-y goodness with that salty bacon. What a yummy combination!!
Cake Ingredients
1 box yellow cake mix, I like Duncan Hines
1 cup All-purpose flour
1 cup granulated sugar
¼ teaspoon salt
1 cup sour cream
½ cup melted butter
1 cup milk, room temperature
4 large eggs, room temperature
1 teaspoon maple extract, optional
Maple Buttercream Frosting
1 cup butter, softened
1 pound confectioners' sugar
3 tablespoons heavy cream
1 tablespoon vanilla
½ teaspoon salt
1 teaspoon maple extract
Topping
1 pound bacon, cooked, sliced finely or crumbled
Maple syrup for garnish
How to make it
Cook your bacon your preferred way. If you want to cook your bacon in the oven Preheat the Oven to 375˚F. Line two baking sheets with parchment paper, silicone baking mat, or foil. Place the bacon on a single layer and bake for 15-20 minutes. Keep an eye on it because it can get over done quickly. If you have thin bacon, ere on the lower time, if your bacon is thick then it might take 20 minutes or a little longer. Once cooked to your preferred crispiness, remove from baking sheet and layer on a paper towel to drain any excess grease. Set aside.
Cupcake Instructions
Preheat oven to 350ºF
Combine all the dry ingredients into a large mixing bowl (cake mix, flour, sugar, salt.) Whisk to incorporate.
Add the wet ingredients to the mixing bowl (sour cream, melted butter, milk, eggs, and extract.) Mix on medium speed (for about 2 minutes) or until all ingredients have incorporated together and you no longer see dry bits. Make sure to scrape your bowl periodically.
Scoop batter into cupcake liners and bake for 15-20 minutes or until a toothpick inserted comes out clean.
Maple Buttercream Frosting Instructions
Whip the butter, confectioners’ sugar, and salt for about a minute using a stand mixer fitted with a paddle attachment. You can use a hand mixer instead if needed.
To not make a HUGE mess, you can add in the confectioner’s sugar in several batches beating on low after each addition. Scrape the bowl down and repeat the process.
Add the heavy cream while mixing on low then add the vanilla. Beat until you have an even, fluffy consistency. You can add more cream or milk if desired for a thinner consistency.
Notes
Don't worry about any of the ingredients on the back of the box, just use the ingredients listed in the recipe.
If you’d like to make cake instead, this recipe makes enough batter for three 6"x2" cakes or two 8"x2" cakes (round) . Just bake for 20-30 minutes or until the toothpick comes out clean.
