Peanut Butter Brownies

These Peanut Butter Brownies offer the perfect blend of salty and sweet, with just the right amount of frosting to satisfy any craving. They're ideal as an after-school snack or a dessert following dinner.

Peanut butter frosted brownies rank among my husband's favorite desserts. The blend of salty and sweet fulfills all those cravings. The frosting is not overly thick, creating an ideal balance.


Pantry Items


  • All-Purpose Flour

  • Cocoa Powder – I love mixing light and dark cocoa powders together to create my own unique blend.

  • Granulated Sugar

  • Powdered Sugar

  • Salt – I typically use kosher salt for everything, but table salt or sea salt will work just fine here.

  • Baking Powder

  • Chocolate Chips - semi-sweet is great in this recipe but dark chocolate chips will be perfect as well.

  • Butter - you'll need this for the brownies and the frosting

  • Oil - I always use avocado oil but you can use any neutral oil such as canola or veggie.

  • Eggs

  • Vanilla Extract

  • Mini Chocolate Chips - these are to sprinkle on top

  • Nuts - optional if you want to add nuts to your brownie. Pecans or walnuts would be perfect.

  • Peanut Butter - creamy is best. My favorite is Jiff Natural Creamy. Regular peanut butter is too sweet for me so I love how the Natural Creamy peanut butter gives the right amount of saltiness.

  • Heavy Cream

Brownie Ingredients


Dry Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 cup cocoa powder

  • 2 1/2 cups granulated sugar

  • 1/2 cup powdered sugar, sifted

  • 1 1/4 teaspoon kosher salt

  • 1 teaspoon baking powder

  • 1 1/2 cups chocolate chips, semi-sweet or dark

  • 1 cup mini chocolate chips, topping


Wet Ingredients

  • 4 Tablespoons butter, melted

  • 3/4 cup oil (avocado, canola, or veggie)

  • 4 large eggs

  • 2 Tablespoons water

  • 1 Tablespoon vanilla extract


Peanut Butter Frosting Ingredients


  • 1 cup unsalted butter

  • 1 cup creamy peanut butter

  • 3 cups powdered sugar, sifted

  • 1 Tablespoon vanilla extract

  • 1/2 teaspoon salt

  • 2 Tablespoon heavy cream



How to make it


Brownies

  1. Preheat oven to 325°F. Lightly spray baking pan with non-stick spray or line pan with aluminum foil.

  2. In a large bowl, whisk together the dry ingredients (flour, cocoa powder, granulated sugar, powdered sugar, salt, and baking powder.)

  3. Add the wet ingredients (melted butter, oil, eggs, water, and vanilla extract) into the bowl of the dry ingredients. Stir until thoroughly combined and no dry bits remain.

  4. Stir in chocolate chips

  5. Pour batter into prepared pan.

  6. Bake for 40-45 mins or until toothpick comes out clean. Cool completely before adding frosting.


Peanut Butter Frosting

  1. Combine butter and peanut butter into a large bowl and use an electric mixer to beat until creamy and well-combined.

  2. With mixer on low speed, add powdered sugar until completely combined. Be sure to scrape the sides and bottom of the bowl so all ingredients are well-combined.

  3. Add in vanilla extract, salt, and heavy cream. Gradually increase speed to medium high and beat for 30 seconds. Give the bowl another scrape and beat again for an additional 30 seconds.


Assembly

  1. Spread frosting onto cooled brownies

  2. While frosting is still tacky, sprinkle on mini chocolate chips. Slice* and enjoy.

  3. *If you're into nice and clean cuts, you can refrigerate frosted brownies for 1-2 hours or until frosting has firmed up and then slice.
